Marinated Herring Salad
• 1 Jar (250g) Nova Scotian Solomon Gundy, drained
• 1 cup (250ml) cooked diced potatoes
• 1 cup (250ml) cooked diced beets
• 2 chopped apples
• 1/2 cup (125ml) chopped dill pickles
• 1/2 small Spanish onion, sliced
Cream Dressing:
• 1 cup (250ml) whipping cream
• 1 tbsp (15ml) white vinegar
• 1 tsp (5ml) prepared mustard
• 1/2 tsp (2ml) dried dill
• 1/4 tsp (1ml) each salt and pepper
