Kippers on Toast
A favourite kipper appetizer in our family is “kipper on toast”
2 slices of toast or melba toast
Mix 1 tbsp capers, 1 tbsp parsley, 1 tbsp chopped pickle, 1 tsp horseradish, 1T onion very finely chopped, a few drops of lemon juice, freshly ground pepper and spread on toast. (Optional, add hardboiled egg and or olive oil)
Slice kippers in thin strips, put on top of toast and cut into bite sizes. Enjoy.
